Ingredients:
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 stick unsalted butter
3/4 cup buttermilk
Directions:
Preheat oven to 450 degrees. Grease a cast iron skillet. Mix dry ingredients together. Cut butter into flour mixture and blend with a pastry blender until it is a crumbly mixture. Add buttermilk. Mix minimally until loose and sticky.
Pour dough onto a floured surface and knead a few time, until no longer wet. Roll the dough out to about 1/4 inch thick and then fold in half. Cut 10-12 biscuits using a biscuit cutter or glass. Place close together in the skillet so they rise up instead of out. Bake for 15 minutes until golden brown.
Banana Pudding

1 1/2 cups cold milk
1 package, 3 oz, instant vanilla pudding
1 can Eagle Brand Milk
Combine above and refrigerate at least 10 minutes.
Add:
8 oz sour cream
8 oz cool whip
Mix well. Line dish with vanilla wafers, alternate layering sliced bananas, filling, and wafers. Top with crumbled wafers on top.

Asian Chicken

2 1/2 pounds chicken (wings or tenders)
2 tsp garlic salt
1 cup corn starch
2 eggs, beaten
1/4 cup oil
Sauce:
3/4 cup sugar
1/2 cup Asian rice vinegar
1/4 cup pineapple juice
3 Tbsp ketchup
1 Tbsp soy sauce
1 tsp accent
Dip chicken in cornstarch, then eggs, fry til brown. Mix all sauce ingredients together and pour over chicken. Bake at 350 degrees for about 45 minutes.
Pumpkin Bread
2 1/2 cups flour
1 cup whole wheat flour
3 cups sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
16 oz canned pumpkin
1 cup applesauce
4 eggs, lightly beaten
2/3 cup water
1 cup milk chocolate chips
Preheat oven to 350 degrees. Grease two 9x5 or three 8x4 loaf pans.
Mix flours, sugar, soda, cinnamon, nutmeg, and salt. Set aside.
Mix pumpkin, oil, eggs, and water together. Stir into dry ingredients. Stir in chocolate chips.
Bake 60-70 minutes until toothpick comes out clean.

Better Bisquick Pancakes
2 cups Bisquick
1 cup milk
2 eggs
2 Tbsp sugar
2 tsp baking powder
1 tsp vanilla
Try to stir less than 40 times.

Grape Jelly
Ingredients:
6 cups juice
1 box no/low sugar pectin (I use the bulk pectin and am generous with my measuring for a firmer set)
3-4 cups sugar
1/2 - 1 package grape kool-aid
Directions:
Bring juice, pectin, and kool-aid to a full rolling boil, add sugar and return to a hard boil for one full minute.
Test consistency and pour into clean warm jars.
Tip: Keep a metal in a glass of ice water, put a bit of the jelly on the cold spoon and allow to set. It is also a great way to see if it has enough sugar. If you need to thicken it up a little pour a little more pectin in (1/4-1/2 package) and bring it to a boil for one more minute. It is tempting to skip this step but it is worth it!

Mix and combine ingredients well. Grease and flour 2 loaf pans. Bake for 45-60 minutes. Let cool in pan before dropping out.

Mix together and add 3 1/2 to 4 cups of flour and knead 6-8 minutes. Let rise until double. Form into 24 rolls (4 rolls by 6 rows on a jelly roll pan). Let rise. Bake at 350 degrees for 15-18 minutes.
