Twice Baked Potatoes

Bake potatoes at 400 degrees, unwrapped until done (I always make a couple of extra potatoes so I will have more filling.)

Cut potatoes in half lengthwise and scoop the inside into a bowl. Let them cool a few minutes, use a big spoon for scooping.

Add:
butter
sour cream
grated cheddar cheese
grated mozzarella cheese
salt and pepper

Use a mixer to make the mixture smooth. Spoon the potato mixture back into the potato skins. Bake at 350 about 20 minutes or until heated through and the cheese is melted.
