1 lb small white beans
10 cups chicken broth
2 medium chopped onions
1 Tbsp oil
2 cans chopped green chilies (4 oz each)
1 ½ tsp oregano
¼ tsp cayenne pepper
4 cups cooked, diced chicken
Monterrey jack cheese
Combine uncooked beans, 6 cups chicken broth, and half of onions. Bring to boil, simmer covered until beans are soft.
Sauté remaining onions in oil till tender add chilies and seasonings. Add to bean mixture with the rest of the broth. Add chicken. Simmer 1 hour.
