Salsa according to Amie

Have you ever noticed that all good salsa makers claim they don't know what they put in it.... that so bugs me. I may not know how much (because I am not a measurer) but if you ask for my recipe I will at least try to help you recreate it. So.... I do not claim to be a great salsa maker but it is pretty good... and easy... and this is exactly how I do it.

For this batch I used:

about 6-7 tomatoes
1/2 of a large purple onion
1 can mild green chiles
10ish jalapeno slices from the jar
chili powder (I am allergic to cumin but most use it.)
salt and pepper

I boil the tomatoes for a short time. (I think it eliminates the bitter flavor that seems to be there with fresh salsa sometimes.) I peel the skins... which are basically falling off after being in the boiling water.

Put the onions in the food processor first to chop them and then add the chilies, jalapenos (I chopped them a bit by hand first) and the spices and blend them together before adding the tomatoes. Then add the tomatoes and mix it until desired texture.

The only bummer about cooking the tomatoes is that it is hard to taste taste warm salsa when you are used to it cool/cold. I thought it needed a little something more so I added some seasoning salt and a few dashes of Tabasco.

This whole process took me about 20 minutes and I got 6-7 cups of salsa.
