Egg Rolls

This is my first attempt at egg rolls (I bought some wrappers and I am loving them!)... they were a huge hit and super easy.Ingredients:

9 Egg Roll Wrappers
2 cups shredded green cabbage
1 cup shredded carrots or finely chopped
6 oz all-natural sausage
(the recipe called for ground pork seasoned with garlic, etc I had sausage already browned in the freezer so I took the shortcut)
2 tbsp flour
2 tbsp water

Mix the flour and water together to make a paste. Brown meat and let cool completely. Mix carrots, cabbage, sausage and paste together.

Place egg roll wrapper on counter in "diamond" position. Put 1/3 cup of mixture in one corner. Fold corner over the top and tuck in filling, fold sides over. Roll up and seal last corner with a bit of water on your finger tip. (You could use much less mixture for more, smaller rolls.)

Fry in oil of choice. I used my small cast iron skillet with about 1/2 inch of oil and turned the rolls as they browned.
