Apple Pie Filling

4 - 4 1/2 cups sugar
1 cup corn starch
2 tsp cinnamon
5 – 6 pounds apples, peeled and sliced in bottles
3 drops yellow food coloring
3 Tbsp lemon juice
1/4 tsp nutmeg

Mix sugar, cornstarch, and juice in pan. Add 1 tsp salt and 10 cups of water. Cook until thick and bubbly. Add spices and food coloring. Add to apples. Process 30 minutes in cold packer.
