Ingredients:4 chicken breasts, boneless, skinless
4 slices Swiss cheese
4 slices ham
1/2 cup seasoned bread crumbs
olive oil
salt
pepper
Pound chicken breasts to 1/4 inch thickness. Rub both sides of each piece with olive oil, salt, and pepper. Place a slice of cheese and a slice of ham on top, roll up each breast and secure with a toothpick. Roll in seasoned bread crumbs.
Bake for 30 to 35 minutes until chicken is thoroughly cooked. Serve immediately.
Optional Sauce:1 tbsp butter
1 tbsp flour
1/3 cup parmesan cheese
1 cup milk
salt and pepper
Blend butter and flour in a sauce pan, add the rest of the ingredients cook until desired thickness.
If you are planning to freeze... do not cook first.
Ready to go in the freezer. I made these a bit smaller and froze them on a cookie sheet and then transferred to freezer Ziplocs when they were frozen solid. I will thaw them before I bake.
