Ingredients:4 - 10 inch flour tortillas
1 large onion, diced
4-5 jalapeno slices, finely chopped
1 can pinto beans
1 pound ground beef/turkey
12 ounces gingerale
1 cup frozen corn
4 green onions
2 cups grated cheddar cheese
2 cloves garlic, minced (I used powdered)
1/2 tsp ground cumin (if desired)
salsa
sour cream
lettuce
Brown meat with diced onion and garlic. Drain. Add jalapenos, beans, corn, cumin, and gingerale. Let simmer until liquid has evaporated. In a pie pan (or spring form pan, trim tortillas to fit the pan for a nice finished look) layers mixture with tortillas and cheese. Top with remaining cheese.
Bake at 400 degrees until hot and cheese is melted.To serve slice into wedges. Top with green onions, salsa, chopped lettuce, and sour cream.
